Chicken Breast Baked with Mozzarella, Tomato, and Basil

This quick dish consists of chicken breast that, after being seared, is baked with tomato, mozzarella, and basil. Aromatic, light, and filling – a great choice for lunch or dinner.

Ingredients

  • 1 piece chicken-breast
  • 0.5 piece mozzarella
  • 1 piece tomato
  • 1 to taste salt
  • 1 to taste black-pepper
  • 1 tablespoon clarified-butter
  • 3 piece basil

Instructions

  1. Gently pound the chicken breast with a meat mallet. Season with salt and pepper on both sides.
  2. Heat clarified butter in a pan.
  3. Fry the chicken for 3 minutes on each side, until golden brown. Transfer the cooked chicken to a baking dish.
  4. Cut the tomato into 3 thick slices. Place the tomato slices on the chicken. Lightly season with salt and pepper.
  5. Slice the mozzarella into 3 pieces and place on top of the tomato. Arrange the basil leaves on top.
  6. Place everything in an oven preheated to 180°C (356°F) and bake for 15 minutes.
