Ingredients

  • pork sausage 1 pound
  • sweet potato 1 medium piece
  • brussels sprouts 8 ounces
  • bell pepper 1 medium piece
  • red onion 0.5 small pieces
  • garlic clove 2 cloves
  • avocado oil 1 tablespoon
  • egg 1 to taste
  • cilantro 1 tablespoon

Tools

  • large skillet
  • wooden spoon
  • plate

Instructions

  1. Cook the pork sausage in a large skillet over medium-high heat, breaking it up with a wooden spoon, until browned and cooked through. Transfer it to a plate.
  2. In the same skillet over medium heat, add the sweet potato and Brussels sprouts. Cover and cook, then uncover and continue cooking, stirring occasionally, until they start to brown. If the vegetables begin to stick, add a little avocado oil.
  3. Stir in the bell pepper, red onion, and garlic. Cook uncovered until the vegetables are softened to your desired texture.
  4. Return the cooked sausage to the skillet and stir just until heated through.

Serving suggestions

Serve on its own, or top with a fried egg and garnish with chopped fresh cilantro. It also pairs well with scrambled eggs, fresh fruit, and toast.

Storage suggestions

Store leftovers in a covered airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or in a skillet over medium heat.
