Ingredients

  • cornmeal 1.25 cups
  • wheat flour 0.75 cups
  • baking powder 1 teaspoon
  • baking soda 0.5 teaspoons
  • salt 0.5 teaspoons
  • egg 1 large piece
  • buttermilk 1.25 cups
  • honey 3 tablespoons
  • avocado oil 2 tablespoons

Tools

  • oven
  • medium bowl
  • whisk
  • spoon

Instructions

  1. Preheat the oven to 350°F (175 °C). Coat an 8 by 8-inch baking pan with cooking spray.
  2. Whisk the cornmeal, whole-wheat flour, baking powder, baking soda and salt in a medium bowl. Make a well in the center.
  3. In another medium bowl, whisk the egg. Add the buttermilk, honey and oil, and whisk until thoroughly combined.
  4. Pour the wet mixture into the well in the dry mixture and stir until evenly moistened.
  5. Scrape the batter into the prepared pan.
  6. Bake until the top springs back when lightly touched and a toothpick inserted in the center comes out clean. Cool, then slice and serve warm.

Serving suggestions

Serve warm. It is great on its own with softened salted butter and an extra drizzle of honey, or alongside chili, soups or other main dishes.

Storage suggestions

Store cooled cornbread wrapped or in an airtight container at room temperature or in the refrigerator for up to 2 days. Freeze tightly sealed for 1 to 2 months. Reheat before serving for the best texture.
