Ingredients

  • sweet potato 0.5 cups
  • oat flour 0.75 cups
  • salt 0.5 teaspoons
  • fresh rosemary 1 teaspoon
  • garlic powder 0.25 teaspoons
  • coconut oil 2 tablespoons

Tools

  • oven
  • mixing bowl
  • rolling pin
  • spatula

Instructions

  1. Preheat the oven to 350°F (175 °C) and line a baking sheet with parchment paper.
  2. If needed, cook the sweet potato until tender and mash it.
  3. Combine the mashed sweet potato, oat flour, salt, rosemary, garlic powder, and coconut oil in a mixing bowl. Stir well to form a uniform dough.
  4. Transfer the dough to the prepared baking sheet and cover it with another sheet of parchment paper. Roll the dough into a thin layer, about 1/8 inch thick. Remove the top parchment sheet and cut the dough into small squares.
  5. Bake until the crackers begin to set.
  6. Remove the baking sheet from the oven and flip each cracker for even baking.
  7. Return to the oven and bake until the crackers are dry and crisp. Remove edge pieces as they finish and continue baking the center pieces, checking frequently near the end.
  8. Cool the crackers completely before serving for the crispiest texture.
